Is there an option to set profiles to automatically receive an email if a reply has been made to their post default?

Not 100% for what your after but try this:
Your settings > Forums > View/Posting/Email Prefs in there is a bit where it controls your 'Watched Topics'. If you watch the topic then you might get a reply. (I have never used the Watched Topics) so it might be worth a go.

Is there a way to make this feature default for everyone though?

Not that I know off. Maybe you could edit the files to make the checkbox clicked in by default, other than that no I don't think so.
