I have some content in my gallery that some members don't want to see but I don't want to set up another group for said members. is there a way I can make it where the members can select if they want to see the content or not?

Not really no.
The only way I can easily think to do this is by changing their member groups so the group that do not want to see category x do not have viewing permissions for it.
